Art in its many forms. People have been transforming humble grains into noble spirits since the third century, and we proudly join this long line of adventurers, fools and alchemists.

The Oola Distillery Story

Oola Distillery produces small batches of gin, vodka and whiskey. This is the real deal – spirits made with a sense of place and a connection to the people who grew the raw ingredients and the man who coaxed them into their more spirited forms. The goal is 100% use of Washington state people and ingredients from grain to glass: gins in which you can taste the botanicals, distinctive vodkas, and whiskey flavorful and smooth.

Oola hosts an on-site distillery and tasting room with bottles available for purchase. Located adjacent to Oola is 10 degrees, initiated and created by dancer and choreographer, KT Niehoff – it is the new home of KT’s dynamic performance company, Lingo Productions.

Kirby’s Story

For Oola owner and distiller Kirby Kallas-Lewis, Oola is a labor of love, intellectual curiosity and commitment to the neighborhood he has called home for more than two decades. Kirby has been studying the art and science of distilling intensively since 2009. He has participated in numerous workshops, tastings, and conferences on the topic of craft distilling by some of the leaders in the industry. A former artist and tribal art dealer, Kirby has long been interested in the power that great food, wine, art, cocktails and entertaining have in connecting people to each other and to a place. Kirby is also in the development stage of a boutique hotel in the town of Waitsburg, WA, near Walla Walla – a quiet, inspiring and rejuvenating locale set against the Blue Mountains, surrounded by rolling wheat country along the southern edge of the Palouse Hills.

The Neighborhood Story

The corner of 14th Ave and E Union ST on south Capitol Hill has experienced a renaissance since 2010. The Chloe Apartments brought Marjorie Restaurant, Mode Fitness, and Skillet Diner. But through all the activity, the La Pazanella Bakery building remained vacant, full of promise and the subject of many rumors over the several years since it closed. (Hardware store!? Dance club!?) Well, the building is now literally full of promise as Oola Distillery opened in the fall of 2011 with its on-site distillery and tasting room, then the 10 degrees space, housing KT Niehoff’s Lingo Productions (check availability as an event rental space), opened along with Lucky 8’s China House and Restaurant Zoe. These inventive and passion-driven venues now fill the once-vacant building with spirit and creativity. We feel we have added to an already vibrant mix of retail and restaurant spaces in the area and we hope you feel the same.

Oola Gin – 750 ml / 375 ml

Tasting Notes
Clear. A very complex and aromatic nose of citrus and rose perfectly balanced with a subtle scent of juniper berry. On the palate the citrus and floral notes come through the juniper first, followed by coriander and cardamom on the mid-palate. The lengthy finish shows hints of caramel and vanilla, reminding us that this gin was made with a base of Oola Vodka.

Waitsburg Barrel Finished Gin – 750 ml

Tasting Notes
We’ve combined thirteen OOLA Gin botanicals with 2-4 months aging in Waitsburg Bourbon casks. Aromas of warm baking spices, honey and herbaceous juniper. A vanilla finish with hints of natural sweetness from organic WA winter wheat.

Waitsburg Bourbon Whiskey – 750 ml

Tasting Notes
This medium to full bodied bourbon presents a classic profile of vanilla, caramel and cherry on the nose – rich and compelling. Sweet, smooth corn combined with brown sugar/maple syrup and oak is balanced with a notable spice contributed by the higher than normal rye content. The finish is beautifully long with notes of buttery oak, toffee, and again the cherries make an appearance.

Oola Vodka – 750 ml / 375 ml

Tasting Notes
Clear. A beautiful nose of citrus with hints of peppers surrounded by layers of vanilla. Supple and smooth with a medium-full body and a long, clean finish of lemon zest, orange peel and caramel. This vodka is perfect for citrus oriented cocktails such as a Vodka Gimlet or in a stand alone cocktail such as a Vodka Martini. And with its complexity and beautiful texture, Oola Vodka is also delicious served on the rocks, perhaps with a bit of lemon or orange peel.

Tasting Notes
A vibrant fiery orange in color and a savory nose of rich red pepper surrounded by a subtle earthiness. The palate builds into a gentle heat and spice that dissipates into a vegetal flavor of red pepper with a touch of sweetness.

Tasting Notes
A beautiful, light emerald green in color displaying a nose of herbs and citrus. On the palate are hints of caramel wrapped around a long, lingering, savory flavor of rosemary and a round, full mouthfeel.

Citrus Vodka – 750 ml / 375 ml
Tasting Notes
A smooth citrus vodka that maintains a bright citrus character. Forward notes of lemon with hints of lime coming through as well. Undertones of a more herbal lemon verbena keeps things interesting in a well-balanced finish. Overall an exceptional spirit.
